Thai Basil Chicken

Ingredients (serves 2):

  • 300g ground chicken (or turkey)
  • 3 cloves garlic, minced
  • 2 red chilies, finely chopped (adjust to taste)
  • 1 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp fish sauce
  • 1 tsp sugar
  • 1 handful Thai basil leaves
  • Steamed jasmine rice, to serve
  • Optional: fried egg on top

Steps:

  1. Heat oil in a wok or pan. Add garlic and chili, stir-fry until fragrant.
  2. Add ground chicken, cook until browned.
  3. Stir in soy sauce, oyster sauce, fish sauce, and sugar. Cook for 2–3 minutes.
  4. Toss in Thai basil leaves, stir until just wilted.
  5. Serve hot over jasmine rice, topped with a fried egg if desired.
