The 2023 OO Wines Seven Springs Chardonnay, grown on high-elevation volcanic soils in Oregon’s Eola-Amity Hills, opens with intense aromas of coconut, apple pie, citrus, and subtle wood spice; the palate is full-bodied and tangy, layered with flavors of dried and cooked apples, citrus zest, and hints of yogurt and matchstick minerality, delivering both richness and freshness, while the finish is long, savory, and vibrant, making it a bold yet precise Chardonnay that blends New World energy with Burgundian finesse.
Winery History
Established in 2015, OO Wines—often called “Double Zero Wines”—was created by Chris and Kathryn Hermann to explore the potential of Oregon’s Willamette Valley alongside Burgundy and Champagne, focusing on Chardonnay and Pinot Noir from select vineyards. The winery is best known for pioneering the “Black Chardonnay” method, a revival of an old Burgundian technique involving low-sulfur winemaking and traditional pressing, which yields wines of extraordinary depth and longevity. Their first release, the VGW (Very Good White) Chardonnay, quickly gained acclaim, and since then OO Wines has expanded to include single-vineyard bottlings from Oregon’s Seven Springs Vineyard as well as prestigious sites in Burgundy and Champagne, positioning itself as a producer that bridges New World innovation with Old World tradition.
