Winemaker Notes

The 2023 Domaine Billaud-Simon Chablis 1er Cru Montée de Tonnerre glows in a pale golden hue with crisp green highlights, unleashing a classic, tightly wound nose of lemon zest, white peach, crushed seashells, and a faint whisper of spicy licorice. Sourced from the estate's prized right-bank parcel adjacent to the Grand Crus, the palate delivers grand-cru-level weight and power without sacrificing an ounce of tension. A dense, satiny mid-palate rich in concentrated yellow fruit and white blossoms is instantly carved through by a raceway of precise Kimmeridgian acidity. Beautifully structured with subtle grape tannins and a compact, dry-extract grip, it sails into a remarkably persistent finish defined by lingering citrus oils, chalky stone, and a mouthwatering salty bite.

About Winery

Founded in 1815 by Charles Louis Noël Billaud following the Napoleonic Wars, Domaine Billaud-Simon is one of the most historic wine producers in the Chablis region of Burgundy. The estate officially adopted its compound name in the 1930s when Jean Billaud married Renée Simon, uniting their family holdings and significantly expanding their vineyard footprint along the Serein River. Managed for decades by Bernard Billaud, the winery built a stellar reputation for crafting pure, crisp, and mineral-driven Chardonnays sourced from prime Kimmeridgian limestone terroirs, including notable Premier and Grand Cru plots. Following a family transition that saw former winemaker Samuel Billaud branch off to form his own label in 2009, the iconic house was acquired in 2014 by the prominent Nuits-Saint-Georges producer Domaine Faiveley, which modernised operations while maintaining Billaud-Simon's independent identity and classic winemaking style.
